Hi, I sent USDC to my MetaMask wallet from an exchange. It arrived as the dollar amount is showing in my “Assets”, but the account is not showing the transaction under “Activity”.
Does anyone know why that is? Does the wallet only show ETH activity?

The transaction from the exchange will not show up in Metamask, you can see it in the exchange.
You will only see transactions you made in Metamask, on the transactions list of Metamask, so deposits from outside sources will not show up.
Please remember Metamask is only a way to interact with you wallet, which is in the blockchain. If you want to see all the transactions, from your wallet independently of which app made it, you can check the blockchain by using etherscan for ethereum network transactions, bscscan for BSC network transactions, and so on.
