So I’ve got my head around gas fees. But still not sure how you select what to set your nonce to? Or is it best to just leave it as standard? Thanks!

Usually, it’s a good idea to just leave the nonce as is for transactions, as Metamask is keeping track of this for you.
But if you are looking to get a long pending transaction unstuck, you can use the custom nonce feature to edit the nonce to the nonce of the oldest pending transaction in your queue to replace the transaction. You can read more about it here.
