This is being worked on in a separate branch on Github:
MetaMask/MetaMask-mobile/tree/feat/walletconnect-v2

There are slight delays because of some blocking issues/bug due to RN & WC update, the development team is actively working on this, and I think it will happen in the next couple of releases.
